"Née bulleuse" means "born bubbling" in English.

Following manual harvest and careful triage, the fruit is cold macerated (imparting the seductive pink hue), gently pressed and then fermented in stainless steel tanks. M. Vallette then follows the traditional (Champagne) method. The sparkling wine then ages on its lees for a full three years. After disgorging, the finished wine rests in bottle for an additional 3-6 months before release.
